Asparagus Arugula Salad
Place 1 lb. trimmed asparagus on a large rimmed baking sheet. Drizzle with olive oil and season with salt and pepper. Bake at 400°F for 10-15 minutes or until tender yet crisp. On a platter, arrange 3 oz. baby arugula, ¼ lb. thinly sliced prosciutto rolled into bundles, asparagus and 1 avocado (peeled, pitted and sliced). Pour dressing over salad. Serves 4.
