Ingredients
1/2 cup vegetable oil
8 tbsp unsalted butter, softened
1 cup Splenda® Sugar Blend
1 egg
2 tsp vanilla extract
2 cups all-purpose flour
1/4 tsp baking soda
1 tsp baking powder
1/2 tsp salt
Preparation
In a medium bowl beat oil, butter and Splenda® Sugar Blend until light and creamy. Add egg and vanilla and beat smooth.
Add remaining ingredients and mix just until combined. Chill dough for 1 hour or until firm.
Preheat oven to 350°F. Divide dough into 24 portions and roll into balls. Place on parchment-lined cookie sheet 2 inches apart. Bake 15-17 minutes or until edges start to brown. Cool completely before serving.
