Strawberry pie

Ingredients
1 refrigerated pie crust, softened according to package directions
1 cup Splenda® Stevia Sweetener
3 tablespoons powdered pectin for low-sugar recipes
4 cups frozen strawberries, thawed, with juice
2 tablespoons fresh lemon juice
½ tablespoon vanilla extract
Fresh strawberries, sliced, for garnish
Reduced fat frozen whipped topping, thawed, for garnish
Instructions
Preheat oven to 350°F. Unroll pie crust and press into pie dish. Prick bottom and side of crust with fork. Turn edge under and flute. Bake for 10-15 minutes or until light golden brown; remove and cool. In a small bowl, stir together Splenda® Stevia Sweetener and pectin. In a saucepan, comcine strawberries and their juice, lemon juice, and vanilla extract. Whisk in sweetener mixture. Bring to rolling boil and cook for 3-4 minutes, until thickened. Pour into prepared pie crust and cool until almost set. Top with thinly sliced fresh strawberries. Refrigerate until filling is set, at least 2 hours. Serve with whipped topping.
Store in a cool, dry place.
