Beef Ravioli with Fresh Tomato & Basil Sauce
13 oz. of Beef Ravioli
About 10 ripe plum tomatoes, diced small
1/3 cup extra virgin olive oil, plus more to finish the dish
Pinch of crushed red pepper flakes
4 cloves of garlic, minced
Kosher salt and freshly ground black pepper
1 tbsp. unsalted butter
2 tbsp. Parmigiano-Reggiano cheese, freshly grated
6 to 8 fresh basil leaves well washed and dried, stacked and rolled into a cylinder and cut thinly crosswise
Directions: Bring a large pot of water to a boil. Cook pasta according to package directions. Drain.
Meanwhile, in a shallow saucepan, heat the 1/3 cup of olive oil over medium-high heat until hot.
Add the garlic and cook for 1 minute. Add the tomatoes, red pepper flakes and season lightly with the salt and pepper. Cook the mixture for 10-15 minutes, until tomatoes are tender and the sauce has thickened.
Add cooked pasta and toss, remove from heat. Add butter, cheese, basil and a drizzle of olive oil.
Mix until pasta is thoroughly coated. Serve.
