Recipe

Manicotti with cheese
1 package (8 oz.) San Giorgio® Manicotti, uncooked
3½ cups (two 15 oz. containers) part-skim ricotta cheese
2 cups (8 oz.) shredded mozzarella cheese, divided
¼ cup grated Parmesan cheese
1 egg, slightly beaten
2 tbsp chopped fresh parsley
½/2 tsp salt
14 tsp ground black pepper
1 jar (26 oz.) pasta sauce

Cook pasta according to package directions. Lay flat on foil to cool. Heat oven to 350°F. In large bowl, combine ricotta, 1½ cups mozzarella, Parmesan cheese, egg, parsley, salt and pepper; spoon into cooled pasta tubes. Spread thin layer of sauce on bottom of 13 x 9 x 2-inch glass baking dish; arrange filled pasta in single layer over sauce. Pour remaining sauce over pasta; cover with foil. Bake 40 minutes. Remove foil and top with remaining mozzarella cheese; bake 15 minutes longer or until hot and bubbly.
Makes 6-8 servings.

Manicotti with cheese (No-Boil method)
Prepare as directed above except:
* Do not cook pasta before filling tubes.
* For sauce, stir together pasta sauce and 1 cup water; heat to boiling. Use heated sauce in preparing dish.
* Bake at 400°F.

Prepare recipe as directed, but do not bake. Cover with plastic wrap, then foil. Refrigerate up to 24 hours or freeze up to 2 months. Remove plastic wrap; replace foil. Bake; Refrigerated Manicotti at 350°F about 45 minutes;frozen Manicotti at 350°F about 1 hour 45 minutes. Remove foil, top with remaining mozzarella cheese. Bake 15 minutes longer or until hot and bubbly.
