Rienzi Quartered Artichoke Hearts, 14 oz
Artichoke Dressing
• 1 can finely chopped Rienzi artichoke hearts
• 6 tbsp. mayonnaise
• 2 tbsp. vinegar
• 1 tbsp. lemon juice
• 1 tbsp. sugar or 2 pks. sugar substitute
• 2 tbsp. minced onion
• 1 tbsp. garlic powder
• 1 tbsp. mustard
Mix ingredients and serve over desired salad.
Artichoke/Potato 3-Egg Omelet
• 1 can finely chopped Rienzi artichoke hearts
• 2 oz. diced mozzarella cheese
• baked potato
• 3 well beaten eggs
• ¹/₂ cup of milk
• desired seasoning
Scoop baked potato from its shell and add finely chopped Rienzi artichokes hearts and mozzarella cheese. Prepare omelet as usual filling with artichoke heart, mozzarella cheese and baked potato mixture.
