Paradise Holiday Fruit Old English Fruit & Peel Mix, 16 oz
Fruit Cake Cookies
Makes 3-5 dozen
Ingredients
1 cup granulated sugar
1/2 cup shortening
1 egg
1 3/4 cup sifted all-purpose flour
1/2 tsp salt
1/2 tsp baking soda
1/4 cup buttermilk
3/4 cup chopped pecans
1 cup chopped dates
16 oz Paradise Old English Fruit Peel Mix
Directions
Preheat oven to 400°. Cream shortening and sugar. Add egg and beat well. Reserve a little flour to toss with fruit. Combine remaining flour with salt and baking soda. Add dry ingredients alternately with buttermilk into shortening mixture. Toss fruits with reserved flour. Fold in floured fruits and chopped pecans. Drop by spoonfuls onto greased baking sheets about 2" apart. Bake 8-13 min., depending on cookie size. Store in airtight container.
Festive Holiday Fruitcake
Makes 1 large or 2 small fruitcakes
Ingredients
1/3 cup bourbon or orange juice
12-16 oz Old English Mix
8 oz Assorted Pineapple Wedges
4 oz Candied Red Cherries
4 oz Candied Green Cherries
1 cup dried apples, chopped
1 cup pitted dates, chopped
2 cups currants or dark raisins
1 cup slivered almonds
1 cup walnut halves
1/2 cup butter or margarine, softened
1 3/4 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup light brown sugar, packed
5 eggs
2 tbsp dark molasses
1 tsp ground cinnamon
1/2 tsp baking soda
Preheat oven to 275°. Pour bourbon or orange juice over combined fruits and nuts in large bowl. Let stand 2-3 hrs., stir occasionally. Add remaining ingredients into large bowl and mix on low. Beat on high 3 min., scraping bowl occasionally. Stir in fruit mixture. Spread mixture evenly in greased 12-cup fluted or angel cake pan, or 2 greased 6-cup fluted cake pans. Press mixture firmly into pan. Bake 3-3 1/2 hrs., until done. Cool in pan on wire rack 20 min. Invert onto wire rack and cool. Garnish with whole cherries, pineapples and nuts.
