Ortega® Taco Seasoning Mix is made from a select blend of spices and traditional ingredients. Combine with browned ground meat to make tacos, tostadas or burritos. Or add to chicken dishes, casseroles, soups and appetizers.
Roasted Vegetable Tacos
• 5 to 6 cups assorted sliced vegetables (red onion, yellow squash, zucchini, red, yellow and/or green bell pepper)
• 1/4 cup vegetable oil
• 1 packet (1oz.) Ortega® Taco Seasoning Mix
• 1 can (16 oz.) Ortega® Refried Beans
• 1/2 cup Ortega® Thick & Chunky Salsa
• 1 package (12) Ortega® Taco Shells
• Mexican blend cheese, shredded
Instructions
1. Preheat oven to 450°F. Move oven rack to lowest position.
2. Toss vegetables with oil in large bowl. Stir in seasoning mix to coat.
3. Spread onto baking sheet. Bake for 12 to 15 minutes.
4. Combine beans and salsa in medium bowl.
5. Fill taco shells with bean mixture.
6. Bake for 1 to 2 minutes.
7. Fill taco shells with 1/4 cup vegetable mixture.
8. Top with cheese.

You Will Need
1 lb ground beef
1 packet Ortega® Taco Seasoning Mix
3/4 cup water
Shredded lettuce & diced tomatoes
Shredded cheese
Ortega® Taco Sauce, any variety
Ortega® Fire Roasted Diced Green Chiles
12 Ortega® Taco Shells
1. Brown 1 pound ground beef*; drain. Add 3/4 cup water and seasoning mix. Heat until thickened, stirring often.
* or 1 lb. boneless chicken breast, cut up, cooked until no longer pink.
2. Fill 12 warmed Ortega® Taco Shells with meat mixture and your favorite toppings.
