Old El Paso Mild Red Enchilada Sauce Value Size, 28 oz
Easy Beef and Chile Enchiladas
1 lb lean (at least 80%) ground beef
1 can 4. 5 oz) Old El Paso™ chopped green chiles
1 can (28 oz) Old El Paso™ red chile enchilada sauce mild
1 package (8. 2 oz) Old El Paso™ flour tortillas for soft tacos & fajitas (6 inch)
1 cup crumbled queso fresco cheese (4 oz)
1. Heat oven to 375°F. Spray 13x9-inch glass baking dish or pan with cooking spray.
2. In 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until no longer pink; drain.
3. In large bowl, stir together beef, chiles and 1 cup of the enchilada sauce; stir to combine.
4. Place tortillas on work surface. Spread ¹/₄ cup beef mixture down center of each tortilla; sprinkle 1 tablespoon cheese on top. Spread ¹/₂ cup of the enchilada sauce evenly on bottom of baking dish. Wrap tortillas tightly around filling, placing seam side down in baking dish. Top with remaining enchilada sauce.
5. Bake about 25 minutes or until hot and bubbly. Remove from oven, and sprinkle with remaining cheese. Let stand 5 minutes before serving.
