Ocean Angel Calamari California Squid, 3 lb
Tomato Sauce
1 full tablespoon oil
1 onion (diced)
3 cloves garlic (minced)
1 cup tomato paste
1 cup water
Salt and pepper to taste
Brown onion and garlic in oil. Add tomato paste and water. Cook slowly 1/2 hour. Then place stuffed squid in sauce and cook another 1/2 hour slowly.
Squid Fish Balls
1 lb. ocean angel squid
2 eggs
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon parsley (minced)
1 clove garlic (minced)
1 tablespoon grated cheese
1/2 cup wet bread crumbs
Mix all ingredients together. Form into balls and shallow-fat fry until brown. After frying, place in tomato sauce mixture (the same used for stuffed squid). Cook 1/2 hour to 1 hour.
Plain Fried Squid
Cut squid into 1 inch squares and dip in flour which has been seasoned with salt and pepper to taste. Shallow-fat fry until golden brown.
Stuffed Squid
1 cup bread crumbs
3 cloves garlic (minced)
1 tablespoon grated cheese
1 tablespoon parsley (minced)
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon raisins
1 hard boiled egg (chopped)
1 teaspoon pine nuts
2 lbs. ocean angel squid
Mix all ingredients together with 1 tablespoon oil. Fill squid 3/4 full and fasten with toothpick. Pan fry squid until light brown. It does not have to be fully cooked. Place in tomato sauce mixture and finish cooking slowly for 1/2 hour.
Baked Squid
Tomato mixture:
Saute 1 thin-sliced onion in oil until light brown. Add 1 can peeled tomatoes. Cook slowly 1/2 hour. Salt and pepper to taste.
Clean squid and cut at one side to lie flat.
Make a bread crumb mixture:
1 1/2 cup bread crumbs
1 tablespoon grated cheese
3 cloves garlic (Minced)
1 tablespoon parsley (Minced)
1 teaspoon salt
1/2 teaspoon pepper
Dip each slice of squid in oil and then in bread crumb mixture. Place in oiled shallow pan and bake for 15 min. At 325 degrees. Take tomato mixture and spread evenly over squid. Bake another 1/2 hour at same temperature until tender.
