Seafood stew
- 1 1b. Northern Chef Seafood Medley
- 2 tablespoons butter
- salt& white pepper to taste
- 1 cup half and half
- 16 oz. clam juice
- 3 cups milk
Thaw seafood as directed. In a large saucepan over medium heat, melt butter: Add clam juice, milk, and half and half. Stir to mix.
Bring to boil, cover and simmer about 5 minutes. Add seafood and simmer about 1-2 minutes more until seafood is cooked throughout. Be careful not to overcook.
Season with salt and white pepper to taste. Serves 4-6.
Quick cioppino
- 1 1b. Northern Chef Seafood Medley
- 1 cup seafood stock
- 1 clove garlic
- 1/2 cup chopped onions
- loaf of crusty bread
- 2 cups tomato sauce
- 1 teaspoon thyme
- 1 bay leaf
- salt and pepper to taste
In a sauce pan place chopped garlic and onions with oil; soften onions and garlic on medium heat; then add spices, tomato sauce, stock and Seafood Medley. Cook for about 20 minutes and serve in soup bowls with crusty bread.
Season to taste. Serves 4.
