Farro is one of the oldest grains cultivated by humans. Originally discovered in the fertile crescent of the Middle East, our Farro is now grown on small family farms in the Umbria region of central Italy.
While Farro is a good source of both protein and fiber, what really sets this grain apart is its broad variety of uses. Farro is a softer grain, with a rice-like texture that absorbs the flavor of whatever it is cooked with, making it perfect for almost any meal: a hot breakfast cereal, a hearty soup, a zesty side dish, and everything in between. Just add your favorite fruit, vegetables and seasoning and enjoy! And because our Farro is pearled (which removes the outer husk), it cooks in just minutes.
Farro Salad with Tomatoes and Herbs
4 cups of water
2 cups Nature's Earthly Choice™ Farro
2 tsp salt
1 pound tomatoes chopped
1/2 sweet onion chopped
1/4 cup diced chives
1/4 cup finely chopped fresh parsley
1 large garlic clove diced
2 tbsp balsamic vinegar
Fresh ground pepper to taste
1/4 cup extra virgin olive oil
Directions:
Combine water and Farro in a medium saucepan. Add the two teaspoons of salt. Cover and bring to boil over high heat. Reduce to medium-low heat and simmer until tender, 20-25 minutes. Drain well and then transfer to large bowl. Add the tomatoes, onion, chives and parsley to the Farro and toss to combine. In a medium bowl, whisk together the garlic, vinegar, salt, pepper and olive oil. Add the vinaigrette to the salad and toss again. The salad should be served at room temperature.
