You will need
1 pkg. McCormick Seasoning Mix
1 tbsp. oil
1 lb. boneless chicken breast, cut into bite-size pieces
2 tbsp. butter
1 can (15 oz.) tomato sauce
1/2 cup heavy cream or half-and-half
Directions
1. Heat oil in large skillet on medium-high heat. Add chicken; cook and stir 5 minutes or until browned on all sides.
2. Melt butter in same skillet. Add seasoning mix and tomato sauce. Reduce heat to low; cover and simmer 5 minutes.
3. Stir in cream. Simmer, uncovered, 5 minutes or until sauce is slightly thickened and chicken is cooked through, stirring occasionally. Serve over cooked basmati rice, if desired.
Kitchen tips: Substitute 1 can (15 oz.) chickpeas (drained) or cubed tofu in place of the chicken.
Sprinkle with chopped fresh cilantro and serve with warm naan bread.
