Shrimp Scampi Bruschetta
(Makes 12 each)
1 package Margaritaville Sunset Shrimp Scampi
1 large tomato, diced
8 leaves of fresh basil, chopped
2 tablespoons of Parmesan cheese, shaved
12 French bread slices, toasted or grilled

Cook shrimp per directions on box. Add tomatoes and basil. Mix well for a few seconds. Evenly distribute shrimp tomato mixture on French bread slices and sprinkle cheese over each slice.
