Margaritaville Jammin' Jerk Shrimp, 8 oz
Succulent Shrimp Seasoned with Jamaican Spices
Jerk Shrimp Quesadilla
(makes 1 quesadilla for 2 people)
1 package Margaritaville Jammin Jerk Shrimp
1/4 cup pepper jack cheese, shredded
1/4 cup red bell peppers, strips
1/4 cup green bell peppers, strips
1/4 cup red onion, strips
2 each flour tortilla shells
1/4 cup green onion, sliced
1/4 cup sour cream
Vegetable oil spray as needed
Place shrimp in a heated sauté pan and cook for 4-5 minutes. Turn shrimp and add peppers and onions cook for additional 4-5 minutes. Remove shrimp and peppers from sauce. Spray each tortilla shell on one side. Place sprayed side of one tortilla shell down. On non-sprayed side evenly distribute 1/2 shredded cheese, shrimp, peppers and onions. Add remaining cheese and top with non-sprayed side. Preheat skillet on medium high. Place quesadilla in skillet until cheese melts and tortilla is golden brown, flip to brown other side. Remove on to cutting board. Cut quesadilla in half, cut half in half to make quarters, then cut each quarters in half to make 1/8ths. Place cut quesadillas on platter and top with green onion and tomatoes. Place sour cream on the side for dipping.
