Makes about 8 funnel cakes
• 3/4 to 1 cup dairy or plant based milk
• 2 large eggs, lightly beaten
• 2 cups Maple Grove Farms® Complete Pancake Mix
• Vegetable oil for frying
• Confectioners' sugar for dusting
Whisk 3/4 cup milk and eggs in large bowl. Whisk in mix until smooth. If batter is too thick to pour, then add additional milk.
Add about 1-1/2 to 2 inches vegetable oil to deep skillet. Heat oil to 375°F.
Pour about 1/3 - 1/2 cup of batter into a liquid measuring cup. Slowly drizzle batter into oil in a thin stream, swirling and crisscrossing the batter over itself. Fry about 90 seconds on each side until golden brown. Remove funnel cake to a paper towel lined plate.
Sprinkle generously with confectioners' sugar and serve immediately.
