"Cajun Style Gumbo"
Ingredients
1 tbsp vegetable oil
1 tbsp flour
1 cup chopped onions
1/4 cup chopped bell pepper
1/4 cup chopped celery
1 pkg frozen okra
1 clove minced garlic
2 bay leaves
2 tbsp tomato paste
2 qts water
1 bag Liberty Crab Claws
2 lbs small peeled shrimp
Salt, pepper and Tabasco to taste
Preparation
Rinse claws thoroughly and set aside. Combine the vegetable oil and flour in a 5 quart saucepan over a medium flame, stirring constantly until lightly browned. Add the chopped onion, celery, okra and bell pepper and saute until limp. Add the minced garlic, bay leaves and tomato paste.
Add the water 1/2 cup at a time stirring constantly. Cover and simmer for 30 minutes. Add crab claws and shrimps. Season with salt, pepper and Tabasco to taste. Simmer for 30 more minutes. Serve in a bowl over rice.
Keep frozen until ready to use
