Frosted Espresso Brownie Bites
Brownies:
2 tsp instant espresso powder
Frosting:
1 cup (2 sticks) butter, softened
2 tsp vanilla
4 tbsp Irish cream liqueur or milk
3 cups powdered sugar
Heat oven to 325°F. Line mini muffin pan(s) with paper baking cups. Brownies: Prepare brownie batter as directed above, adding espresso powder. Spoon batter into muffin cups, filling 1/2 full. Bake 16-18 minutes. Cool thoroughly
before frosting. Frosting: Mix butter, vanilla and liqueur or milk until smooth. Add powdered sugar, one cup at a time, mixing until light and fluffy. Spread frosting over cooled brownies. Makes 42 brownie bites.
