Jumbo Apple Cinnamon Muffins
1 package Krusteaz Gluten Free Cinnamon Swirl Crumb Cake Mix
1 pouch cinnamon crumb topping (enclosed), divided
1 cup diced apple
1/8 teaspoon maple extract
1/3 cup water
1/4 cup vegetable oil
5 eggs

Heat oven to 350°F. Lightly grease or line jumbo muffin pan. Combine half of cinnamon crumb topping, apples and maple extract. Set aside. Stir together water, oil, eggs and cake mix until blended. Fold apple mixture into batter. Scoop batter into muffin cups, filling 2/3 full. Sprinkle remaining topping evenly over batter. Bake 27-32 minutes.
