Banana Nut Muffins
2 Cups Kodiak Cakes Mix
1/2 Cup Brown Sugar
1/2 Cup Non-Dairy Milk
1/2 Cup Oil
2 Ripe Bananas, Mashed
1/2 Tsp Cinnamon
1/2 Cup Walnuts, Chopped (Optional)
Preheat oven to 350° F. Combine all ingredients in a mixing bowl and blend until smooth. Fill greased muffin cups 3/4 full. Bake for 16-18 minutes or until tops are golden. Makes 12 muffins.
Plant-Based Brownies
1 Cup Dark Chocolate Chips
1/4 Cup Non-Dairy Butter
3/4 Cup Kodiak Cakes Mix
1/4 Cup Cocoa Powder
1/2 Cup Sugar
3/4 Cup Applesauce
2 Tbsp Water
Preheat oven to 350°F and grease a 9" x 9" baking pan. Place chocolate chips and non-dairy butter together in a microwave safe bowl. Microwave in 20 second intervals, stirring between each, until the chocolate is melted and smooth. In a large bowl, mix the Kodiak Cakes Mix, cocoa powder, sugar, applesauce, water, and melted chocolate mixture until combined. Pour the batter into the greased pan and bake for 15-20 minutes or until a toothpick comes out slightly moist.
Makes 12 brownies.
For high-altitude baking (+3,000ft), increase oven temperature by 25° F.
