Luscious Parfaits
Makes 6 servings
2 env. (0.25 oz. each) Knox® Unflavored Gelatine
3 1/2 cups fruit punch divided
1 cup vanilla nonfat yogurt
3/4 cup thawed frozen whipped topping
Sprinkle gelatine over 2-1/2 cups juice in small saucepan; let stand 1 min. Stir over low heat until gelatin completely dissolves, about 2 min. Cool 15 min.
Mix 1 cup gelatine mixture with yogurt; pour into 6 (8- to 10-oz.) glasses. Place 3 glasses in each of 2 cloth towel-lined loaf pans, tilting glasses against sides of pans. Refrigerate 1-1/2 hours or until gelatine mixture is set but not firm.
Meanwhile, stir remaining juice into remaining gelatine mixture. Let stand at room temperature until ready to use.
Stand glasses upright. Pour clear gelatine mixture over gelatine layers in glasses. Refrigerate 1 hour or until firm.
Serve topped with whipped topping
Variation: Prepare using your favorite fruit drink, such as lemonade, and/or your favorite fruit-flavored yogurt.
Fruit juice knox blox
Makes 42 servings
1 qt. (4 cups) apple juice, divided
4 env. (0.25 oz. each) Knox® Unflavored Gelatine
Bring 3 cups juice to boil. Meanwhile, sprinkle gelatine over remaining juice in large bowl; let stand 1 min.
Add hot juice to softened gelatine; stir 5 min. or until completely dissolved. Pour into 13x9-inch pan.
Refrigerate 3 hours or until firm. Cut into 1-inch squares. Keep refrigerated.
Substitute: Prepare using your favorite fruit juice.
Special extra: Add 2 tbsp. sugar or honey to gelatine mixture before pouring into 13x9-inch pan.
It's-a-snap cheesecake
Makes 8 servings
½ cup sugar
1 env. (0.25 oz.) Knox® Unflavored Gelatine
1 cup boiling water
2 pkg. (8 oz. each) Philadelphia cream cheese, softened
1 tsp. vanilla
1 ready-to-use graham cracker crumb crust (6 oz.)
Combine sugar and gelatine in medium bowl. Add boiling water; stir 5 min. or until gelatine is completely dissolved.
Beat cream cheese and vanilla in large bowl with mixer until blended. Gradually beat in gelatine mixture. Refrigerate 45 min. or until thickened, stirring every 15 min. Pour into crust.
Refrigerate 3 hours or until firm.
Brandy alexander pie
Makes 8 servings
20 oreo cookies, finely crushed
1/4 cup butter or margarine, melted
1 env. (0.25 oz.) Knox® Unflavored Gelatine
1/4 cup water
1 1/2 cups whipping cream
1/4 cup sugar
2 tbsp. brandy
2 tbsp. white creme de cacao liqueur
Mix cookies crumbs and butter; press onto bottom and up side of 9-inch pie plate. Refrigerate until ready to use.
Sprinkle gelatine over water in small saucepan; let stand 1 min. Cook over low heat 2 min. or until gelatine is completely dissolved. Cool 5 min.
Beat cream in large bowl with mixer on high speed 1 min. or until slightly thickened. Add remaining ingredients; beat on medium speed until blended. Gradually beat in gelatine; pour into crust. Refrigerate 2 hours or until firm.
Special extra: Garnish with additional whipped cream and toasted flaked coconut just before serving.
Variation: Substitute 1/2 tsp. brandy extract for the brandy, and 1 tsp. vanilla for the creme de cacao.
