Cooking stock is a central ingredient for soups, sauces and marinades. It is used by many to flavor vegetables, potatoes and rice dishes. For years, making stock from scratch has been the only way health-conscious cooks have been able to control and limit ingredients, such as salt and artificial ingredients.
Kitchen Basics Original Seafood Stock is inspired by homemade, providing an all-natural, flavorful and healthy alternative to broth that is certified heart-healthy by the American Heart Association. It's made by slow-simmering haddock, cod, salmon vegetables and a savory blend of the finest quality herbs and spices. Steam oysters and mussels in stock or use in lieu of butter to make a scrumptious shrimp scampi. It's authentic and naturally delicious.
Spiced Seafood Stew
Prep time: 20 minutes
Cook time: 15 minutes
1 tbsp. olive oil
1 medium onion, finely chopped
2 tsp. minced garlic
1 tsp. ground cumin
1/2 tsp. ground cinnamon
1/4 tsp. ground cayenne red pepper
1 can (14 1/2 oz.) diced tomatoes, drained
1 cup Kitchen Basics® Original Seafood Stock
1/4 tsp. salt
1/8 tsp. Spanish saffron, crushed
8 oz. scallops
8 oz. medium shrimp, peeled and deveined
8 oz. mussels, rinsed
Heat oil in large saucepan on medium heat. Add onion and garlic; cook and stir 5 minutes or until tender. Add cumin, cinnamon and red pepper; cook and stir 1 minute.
Stir in tomatoes, stock, salt and saffron. Bring to boil. Add shrimp, scallops and mussels. Return to boil. Reduce heat to low; cover and simmer 5 minutes or until mussel shells open. Discard any that do not open. Serve with cooked couscous, if desired.
Makes 4 servings.
Freeze leftover stock in freezable container and use within 60 days.
Refrigerate Unused Portion. Good for 7 Days
