Sesame Ginger Chicken Stir-Fry

1½ cups Kitchen Basics® Original Chicken Bone Broth
1 tbsp. arrowroot powder
¹/₄ tsp. crushed red pepper
1 tbsp. coconut oil
1 lb. boneless skinless chicken breasts, cut into thin strips
1 medium red bell pepper, cut into thin strips
1 lb. asparagus, cut into 1-inch pieces
4 oz. shiitake mushrooms, sliced
3 cloves garlic, minced
1 tbsp. grated fresh ginger
½ tsp. sea salt
2 tbsp. toasted sesame seeds
Mix bone broth, arrowroot and crushed red pepper in a small bowl until smooth. Set aside. Heat coconut oil in large skillet on medium-high heat. Add chicken; stir fry 5 minutes or until browned. Remove from skillet. Add vegetables, garlic, ginger and sea salt; stir fry 3 minutes or until tender-crisp.
Stir bone broth mixture. Add to skillet; stirring constantly, bring to boil on medium heat and cook 2 minutes or until thickened. Add chicken; stir fry until cooked through. Sprinkle with sesame seeds. Serve with rice, if desired.
Makes 6 servings.
Freeze leftover broth in freezable container and use within 60 days.
Refrigerate Unused Portion. Good for 7 Days.
