Jiffy Buttermilk Biscuit Mix, 8 oz
Banana Nut Bread
One loaf
1 pkg. Jiffy Buttermilk Biscuit Mix
3/4 cup sugar
1/4 cup margarine or butter, softened
2 eggs
1 cup ripe banana, mashed
1/3 cup nuts, chopped
Preheat oven to 350°F.
Grease a 9" x 5" load pan. Cream sugar and margarine or butter. Add remaining ingredients. Mix until blended. Pour batter into pan. Bake 50 - 55 minutes. Cool slightly before removing from pan.
"Jiffy" Rolled Biscuits
Yield 5 - 6 biscuits
1 pkg. Jiffy Buttermilk Biscuit Mix
1/2 cup water
Preheat oven to 450°F.
Stir biscuit mix and water to a soft dough.
Turn dough onto lightly floured surface, knead 2 - 3 times.
Roll or pat out to 1/2" thick.
Cut with 2-1/2" floured cutter and place on ungreased baking sheet.
Bake 10 - 12 minutes.
Drop Biscuits: Follow recipe above except do not knead. Drop by tablespoon on ungreased baking sheet.

Pancakes and Waffles
10 - 12 Pancakes or Four 7" Waffles
1 pkg. Jiffy Buttermilk Biscuit Mix
1 egg
3/4 cup milk or water
2 tbsp. oil
Preheat griddle or waffle iron to medium heat (350° F to 375° F) or as manufacturer directs. Griddle/waffle iron is ready when a few drops of water sizzle and disappear. Grease lightly. Combine ingredients until large lumps disappear. For pancake, use 1/4 cup batter. When pancake bubbles around edge, turn. Pancake is done when bottom is lightly browned. For waffle, use 3/4 cup batter. Cook until steaming stops.
