Indian Head Enriched Old Fashioned Stone Ground Yellow Corn Meal, 32 oz
Indian Head Enriched Yellow Corn Meal is ground - slowly - on old fashioned stone buhrs from whole kernels of plump yellow corn. It is never overheated. The heart or "germ" of the corn, so rich and wholesome in natural oils and vitamins, is ground right into your meal so that it retains all of its full flavor-goodness.
Golden Yellow Corn Bread or Corn Muffins
1 cup Indian Head Yellow Corn Meal
1 cup all purpose flour
1/4 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1 cup milk
1 egg, beaten
1/4 cup oil
Preheat oven: 425 degrees
In a bowl, combine corn meal, flour, sugar, baking powder and salt. In a separate bowl, combine milk, egg, and oil. Combine the wet and dry ingredients and stir until just blended.
Corn Bread: Pour batter into 8x8 greased pan. Bake 20-25 minutes or until golden brown.
Corn Muffins: Pour batter in greased or lined muffin tins, filling about 2/3 full. Bake for 15-20 minutes or until golden brown. Makes 12 muffins.
For a Sweeter, Moister Corn Bread or Corn Muffins
Preheat oven: 400 degrees.
Using the recipe above, increase sugar to 1/2 cup, increase oil to 1/2 cup and use 2 eggs. Reduce milk to 2/3 cup. Mix as directed above.
Corn Bread: Pour batter into 8x8 greased pan. Bake 20-25 minutes or until golden brown.
Corn Muffins: Pour batter in greased or lined muffin tins, filling about 2/3 full. Bake for 15-20 minutes or until golden brown. Makes 12 muffins.
Honey Corn Bread or Corn Muffins
1 cup Indian Head Yellow Corn Meal
1 cup all purpose flour
1/2 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
2 large eggs, beaten
1/2 stick unsalted butter, melted
1/4 teaspoon vanilla
1/4 cup honey
Preheat oven: 400 degrees
In a bowl, combine corn meal, flour, sugar, baking powder and salt. In a separate bowl, whisk together the milk, eggs, melted butter, vanilla and honey until well blended. Combine the wet and dry ingredients and stir until just blended.
Corn Bread: Pour batter into 8x8 greased pan. Bake 20-25 minutes or until golden brown.
Corn Muffins: Pour batter in greased or lined muffin tins, filling about 2/3 full. Bake for 13-17 minutes or until golden brown. Makes 12 muffins.
