Indian Head Enriched Old Fashioned Stone Ground White Corn Meal, 32 oz
Indian Head Enriched White Corn Meal is ground - slowly - on old fashioned stone buhrs, from whole kernels of plump white corn. It is never overheated. The heart or "germ" of the corn, so rich and wholesome in natural oils and vitamins, is ground right into your meal so that it retains all of its full flavor-goodness.
Corn Bread or Corn Muffins
1 cup Indian Head White Corn Meal
1 cup flour
1/4 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1/4 cup oil
1 cup milk
1 egg, beaten
Corn Bread: Preheat oven to 425°. Combine corn meal, flour, sugar, baking powder and salt in a bowl. Mix oil, egg, and milk together and add to dry ingredients mixing just until batter is uniform. Bake in a greased 9x9x2 inch pan for 20 to 25 minutes.
Corn Muffins: Pour Corn Meal batter into greased or lined muffin tins, filling about 2/3 full. Bake at 425° for 15-20 minutes. Makes 12 muffins.
For a sweeter, moister corn bread or muffin, change these items in the above recipe to the following amounts: use 2/3 cup milk, 1/2 cup sugar, 1/2 cup oil and 2 eggs. Reduce heat to 400° and bake for 20-25 minutes.
Fish/Seafood Breader
3/4 cup Indian Head White Corn Meal
1/2 cup all purpose flour
1 1/2 tsp salt
1/4 tsp red pepper
1/2 tsp black pepper
1/2 tsp cumin
1/4 tsp chili powder
1 tsp garlic powder
1 tsp onion powder
For pan or deep fry fish:
1. Combine all dry ingredients.
2. Dip fish fillets in water, drain, and then place in breading mixture, turning several times to coat fish.
3. Pour about 1/4" of vegetable oil in a large skillet and heat on medium. Fry coated fish 2 to 3 minutes per side or until fish flakes easily with a fork, or deep fry at 350F for 4-6 minutes.
**For a spicier breader, add an extra 1/2 tsp red pepper and 1/4 tsp of chili powder to the above recipe.
Hush Puppies
1 cup Indian Head White Corn Meal
3/4 teaspoon salt
1 teaspoon baking powder
3/4 teaspoon sugar
1 egg
1/2 cup milk
1/4 cup onion, finely minced (optional)
Preheat deep fat fryer to 375°F. Combine dry ingredients. Beat together egg and milk; add to dry ingredients. Stir until smooth. Drop by teaspoonfuls into fryer. Fry until golden brown. Drain on paper towel. Makes 15 to 20 hush puppies.
