Goya Pinto Beans, 4 lbs
Refried beans
½ lb. Goya® dry Pinto Beans
½ cup Goya® Olive Oil
1 small onion, chopped
Salt and pepper to taste
2 tbsp. fresh cheese
* or use ½ cup Goya® Olive Oil
Soak beans and drain. In a large saucepan, combine beans and 4 cups water. Cook until beans are tender. Add more water if necessary. Drain, reserving about 12 cup of liquid. Mash the beans. Adding as little of the liquid as necessary. Heat oil in a medium skillet. Stir in onion and cook until tender. Add beans, salt and pepper. Continue cooking until the bean liquid starts to evaporate. Reduce heat and simmer 5 minutes. Serve with crumble cheese. Serves 4.
