Corn Muffins
Makes 12 muffins
1 1/2 cups Goya® Yellow Corn Meal-Fine
3/4 cup all-purpose flour
2/3 cup sugar
1 tbs. double acting baking powder
1 tsp. salt
1 cup buttermilk
1 large egg
3 tbs. butter or margarine, melted
Preheat oven to 400°F.
1. Grease muffin pan (12 molds) or line with paper cups.
2. In a bowl, sift together corn meal, flour, sugar, baking powder and salt.
3. In a separate bowl, whisk together buttermilk, egg and butter.
4. Combine the wet and dry ingredients until just mixed.
5. Distribute the batter evenly among the 12 cups. Bake for 20 to 25 minutes or until a toothpick inserted comes out clean.
