Goya Cannellini White Kidney Beans, 16 oz
Minestrone soup
½ lb. Goya® dry Cannellini Beans
½ lb. Goya® dry Chick Peas
4 slices of bacon, chopped
¼ cup onion, chopped
½ cup carrots, chopped
1 cup zucchini, diced
1 tsp. Goya® Minced Garlic
½ cup Goya® frozen Green Peas or Fresh Peas
1 cup plum tomatoes, diced
2 Packets Goya® Beef Bouillon Powder
Soak beans and a drain. Combine 10 cups water and beans in a 6 to 8 quart pot. Bring to a boil. Reduce heat, cover and simmer 1 hour. Meanwhile, in a skillet, cook bacon until crisp; reserve for topping. Drain bacon drippings, leaving about 1 tbsp. in pan and cook the onion, carrots, zucchini, and garlic until tender. Add mixture into beans in pot. Stir in remaining ingredients and cook until beans are tender. Serve with reserved bacon pieces and parmesan cheese, if desired. Serves 8.
