Goya Baby Lima Beans, 16 oz
Baby lima beans salad
½ cup Goya® dry Baby Lima Beans
½ red pepper, chopped
1 small red or sweet onion, chopped
1 medium cucumber, chopped
1 tbsp. balsamic vinegar
3 tbsp. Goya® Olive Oil
1 packet Goya® Salad and Vegetable Seasoning
Salt and pepper to taste
Soak beans and drain. Gently cook beans in 4 cups of water until tender. Add more hot water if necessary. Drain. Toss beans with remaining ingredients in a medium bowl. Cover and chill.
Serve on salad greens, if desired. Serves 6.
