Spicy Southern Style Mixed Greens
10 ounces country or smoked ham (cubed)
1 medium yellow onion (diced)
3 cloves of fresh garlic (minced)
¹/₄ cup apple cider vinegar
16 oz. Glory® Fresh Southern Blend Greens, (hard stems removed)
1 tsp. fresh pepper
1 tsp. red pepper flakes (adjust to preference)
1 tsp. brown sugar (optional)
32 ounces low-sodium chicken broth
Put the ham in a large Dutch oven or stockpot over medium heat. Cook the pork until it is crisp and browned, about 8 minutes. Add the chopped onion, garlic and apple cider vinegar, cook for another 2 minutes.
Add the Glory Southern Blend greens to the pot and season with the black pepper, red pepper flakes and optional brown sugar. Pour in the chicken broth and stir to combine. Bring the greens to a simmer and cover the pot. Reduce the heat to medium low and cook until the greens are tender and liquid is reduced by half, about 45 minutes. Remove lid and continue to cook, stirring occasionally, until liquid is nearly gone, about 10 minutes. Serve immediately and enjoy!
For a vegan version, just leave out ham and replace chicken broth with vegetable broth and you are glorious!
