Glory Foods Collard Greens, 32 oz
Stir Fried Collards
16 oz. Glory® Fresh Collard Greens, (rinsed and hard stems removed)
1 tbsp. olive oil
1 medium onion, sliced thin
1/2 green and red bell pepper, sliced thin
4 garlic cloves, peeled and chopped
1 tsp. seasoning salt
1/2 tbsp. sugar
1/4 tbsp. pepper
Sauté onion, peppers and garlic in oil over medium heat for 5 minutes or until just soft. Add Glory® Fresh Collard Greens, and turn heat up to medium-high. Add seasoning salt, sugar, and pepper, cook for 5-7 minutes or until desired consistency. Serve hot over rice or alone as a side dish. Recipe can be halved.
French Onion Soup w/ Collards
1 large sweet Vidalia onion thinly sliced
1 tbsp. olive oil
1 tsp. thyme
1/2 tsp. salt
1/4 tsp. black pepper
4 cups beef broth
16 oz. Glory® Fresh Collard Greens
Sliced bread and cheese optional
Add olive oil to pan and turn to medium-high heat. Allow to heat up for 30 seconds to 1 minute. Add onion, salt, pepper and thyme. Cover pan with lid and cook onions until slightly brown and completely translucent (3-5 minutes). Stir in Glory® Fresh Collard Greens, cover and cook for an additional 2-3 minutes or until Glory® Fresh Collard Greens are slightly tender. Add beef broth and simmer on low heat for 10 minutes.
Optional: Transfer soup to oven proof bowls, top with crusty bread and Gruyere cheese and place under a broiler for 1 minute.
