Plant-based turk'y feast with roasted veggies
Ingredients
12 baby potatoes, cut in half or quarters
2 large carrots, peeled and cut into 1" pieces
3 parsnips, peeled and cut into 1" pieces
2 medium onions, sliced into 8 wedges
3 tbsp olive oil
2 sprigs each fresh rosemary & thyme
2 cloves garlic, peeled and smashed
¼ tsp fine sea salt
¼ tsp coarse black pepper
1 frozen plant-based turk'y roast
Preparation
Preheat oven to 425°F.
Place vegetables in a baking dish and toss with olive oil, herbs, garlic, salt and pepper.
Remove roast from wrapper and place in a second baking dish.
Cover each baking dish with foil and bake for 1 hour 20 minutes, stirring vegetables halfway through cooking.
Remove foil from roast and bake an additional 20-25 minutes (oven temperatures may vary) until golden brown, crispy and internal temperature reaches 165°F.
Remove vegetables from oven when desired texture is reached. Keep warm while roast finishes cooking.
Remove roast from oven. Let cool slightly, slice and serve with roasted vegetables and warmed gravy.
