Simply Butternut Soup
1 15 oz. can Farmer's Market Butternut Squash
14 oz. organic broth (chicken or vegetable)
1 medium onion, diced
2 large carrots, diced
1/2 teaspoon baking soda
1 teaspoon cinnamon
2 cups half and half
Salt and pepper to taste
In a large pot, bring all ingredients, except Butternut, to a simmer for 10-15 minutes, until vegetables are soft. (Optional: put vegetable mixture into a food processor and blend until smooth, then return to pot.) Add Butternut and half and half, and simmer for 10 minutes. Serve hot, and enjoy!
