Organic Red Lentil Penne with green bean and tomatoes
Ingredients - serves 4:
• 8oz (227g) Red Lentil Penne
• 1/3 lb (150g) green bean
• 1 cup grape tomatoes (re/yellow), halved
• 2 tbsp olive oil
• 3 garlic cloves, finely chopped
• 1 tbsp parsley, chopped
• salt & pepper to taste
• red chili flakes to taste
Cooking Instructions:
Pasta: prepare according to above instructions.
• Cook the beans in boiling water for five minutes, drain and slice into thirds.
• Heat olive oil in a pan over medium-high heat. Add garlic and fry for 1 minute.
• Add green beans and tomatoes to warm through.
• Toss bean mixture with the Red Lentil Penne.
• Season to taste and garnish with parsley and red chili flakes.
Store in a cool dry place
