Organic Edamame Spaghetti with a Tangy and Spicy Sauce
Ingredients - serves 4:
• 8 oz (227g) Explore Cuisine Organic Edamame Spaghetti
• 1 cup cauliflower florets
• 1/2 cup green beans cut into 1" pieces
• 2 oz sundried tomatoes
• 2 red hot chilis - thinly sliced
• chives for garnish
Ingredients - sauce:
• 2 tbsp soy sauce
• 2 cloves garlic crushed
• 1 tbsp ginger finely grated
• 2 tbsp lemon juice
• 1 tsp sesame oil
Cooking Instructions:
Pasta: prepare according to above instructions.
Sauce: mix all ingredients together and leave to infuse for 10 minutes.
• Blanch cauliflower florets for 2 minutes. Place green beans in a sauepan of lightly salted boiling water, turn down heat and simmer for 5 minutes.
• Cut the sundried tomatoes in to small pieces.
• Gently fold pasta into the sauce, add cauliflower, beans and tomatoes.
• Sprinkle liberally the chopped fresh chives.
• Serve warm.
