Lemon Pie Filling
Ingredients
1-1/2 cup (298g) sugar
1/2 cup (106g) Davis® Corn Starch
2-1/4 cups (533ml) water
6 large egg yolks
1 tbsp (11g) lemon zest
1/2 cup (118ml) lemon juice
3 tbsp (44g) butter
1/4 tsp (1g) salt
Instructions
In a saucepan combine the sugar and Davis® Corn Starch. Stir in the water and bring to a boil over moderate heat, continuing to stir. Remove from heat. In a bowl beat the egg yolks until lemon-colored. Add 1/4 of the the hot liquid (about 1 cup) (252 ml) into the yolks and mix well; pour the yolk mixture into the saucepan and stir, return to heat, stirring constantly, bring the mixture to a boil over moderate heat. Turn down heat and simmer for 3 minutes. Remove from the heat and stir in the lemon zest, juice, butter and salt. Pour the hot filling into pre-baked pie crust.
Chill at least 1 hour before serving.
