Eggplant Stuffed Peppers
Ingredients:
6 bell peppers, assorted colors
2 tbsp Cento Extra Virgin Olive Oil
2 medium eggplants, peeled and cut into ½ inch pieces
3 tsp Bellino® Minced Garlic
1 ½ cups Cento Plain Bread Crumbs
½ cup water
2 tbsp Romano cheese, grated
⅓ cup mozzarella cheese, grated
Cento Ground Black Pepper, to taste
1 tbsp fresh basil, finely chopped
1 tbsp fresh parsley, finely chopped
Cento Marinara Sauce, if desired

Stuffing:
2 medium ripe tomatoes, chopped
6 Cento Jumbo Pitted Black Olives, chopped
⅓ cup fresh basil, finely chopped
⅓ cup fresh parsley, finely chopped
¾ cup Romano cheese, grated
⅓ cup mozzarella cheese, grated

Instructions:
Preheat oven to 350°F and bring a large pot of water to a boil. Slice peppers in half lengthwise and remove stem, seeds and pits. Boil peppers for 5-7 minutes, drain, and lay cut-side down on paper towels. Set aside. Heat oil over medium heat, then add eggplant and garlic, mixing well to combine. Cook 1-2 minutes, reduce heat to medium-low. Cook for 30 minutes, stirring occasionally, until eggplant is soft but not browned. Add more oil as needed. Remove from heat and mix in breadcrumbs until moist. Stir in stuffing ingredients. Fill peppers with mixture, careful not to pack too tightly. Pour water into a baking dish, add stuffed peppers and lightly cover with with foil. Bake for 30 minutes, then remove foil and top with remaining cheese. Bake an additional 30 minutes. Remove from oven and top with black pepper, basil, and parsley. Serve with marinara sauce. Serves 6.

Aunt Carmela's Classic Meatloaf
Ingredients:
Cento Classic Olive Oil, for brushing
1 small onion, chopped
1 egg
⅔ cup Cento Plain Bread Crumbs
1 can Cento Sauce Italiano (8 oz)
1 tbsp Worcestershire sauce
1 tsp Cento Fine Sicilian Sea Salt
¼ tsp Cento Ground Black Pepper
1 lb ground beef
½ lb ground pork
½ lb ground veal

Instructions:
Preheat oven to 375°F. Line a baking sheet with aluminum foil and lightly brush with oil. In a medium bowl, combine onion, egg, bread crumbs, ¹/₂ cup sauce, Worcestershire, salt and pepper. Stir with a fork until combined, then add the ground meats and blend well. Mold meat mixture into a loaf approximately 8" x 4" x 2 ½". Place meat onto baking sheet and bake 45 minutes. Spread remaining sauce over loaf and cook an additional 15 minutes, or until meat reads 160-165°F. Let stand 5 minutes before slicing. Serves 6.
