Gluten Free Chicken Parmesan
Ingredients:
3 jumbo eggs
1/4 cup fresh Italian parsley, chopped
1/4 tsp Cento Fine Sicilian Sea Salt
1/4 tsp Cento Black Pepper
2 lbs chicken breast, pounded thin
2 cups Cento Gluten Free Panko Bread Crumbs
1 1/2 cups Cento Classico Olive Oil
2 jars Cento Marinara Sauce (25.5oz)
1/2 cup pecorino Romano cheese, grated
1/4 cup fresh basil, chopped
1lb mozzarella cheese, shredded
Instructions:
Beat eggs in a medium size bowl. Add parsley, salt and pepper; mix to combine. Dip one piece of chicken in bread crumbs, shake off excess; then dip in egg mixture covering completely. Finally, dip back in the bread crumbs and shake off excess. Heat oil in a 12" frying pan over medium heat. Once hot, cook chicken for approximately 3 minutes on each side, or until browned. Repeat until all chicken has been fully cooked; set aside. Preheat your oven to 350° F. Cover bottom of two 9" x 13" baking dishes with 1 1/2 cup marinara sauce each. Place cooked chicken in baking dish and cover evenly with remaining marinara sauce. Sprinkle with Romano cheese and basil; spread mozzarella cheese evenly over chicken. Bake in the oven for 10-11 minutes or until cheese is melted.
Store in a Cool Dry Place.
