Italian Vegetable Stew

Ingredients:
1/2 cup Cento Organic Extra Virgin Olive Oil
1 cup red onion, loosely chopped
1/4 cup Bellino® Whole Garlic Cloves
1/2 cup celery, loosely chopped
2 cups Cento Organic Tomatoes, reserve puree
2 cups russet potatoes, peeled and chopped
2 cups zucchini, chopped into 1 inch pieces
4 cups eggplant, chopped into 1 inch pieces
1 cup baby portabella mushrooms, sliced
1 Cento Bay Leaf
4 cups Cento Organic Vegetable Stock
1 Cento Whole Hot Chili Pepper (optional)
12 oz Cento Roasted Peppers, chopped
14 oz Cento Artichoke Hearts
Cento Course Sicilian Sea Salt, to taste
Cento Ground Black Pepper, to taste

Directions:
Heat oil in a large pot and add onion, garlic and celery. Sauté for 3 minutes then add chopped tomatoes and reserved tomato puree; cook for 2 minutes. Mix in potatoes, zucchini, eggplant, mushrooms, bay leaf, vegetable stock and chili pepper. Cover and bring to a boil, then reduce heat to medium and let simmer for 20 minutes. Add roasted peppers and artichokes; allow to simmer an additional 15 minutes. Add salt and pepper to taste. Serves 4.

Store unopened carton at room temperature. After opening, refrigerate promptly after each use. Use within 7-10 days. Do not dilute. Do not microwave or freeze carton.
