Chicken Parmesan
Ingredients:
2 eggs
1 cup Cento Seasoned Bread Crumbs
1 cup flour
2 lb chicken breast, sliced and pounded thin
5 tbsp Cento Imported Extra Virgin Olive Oil
2 cups Cento Pasta Sauce
2 cups mozzarella cheese, shredded
1/4 cup Parmesan cheese, grated
Instructions:
Preheat oven to 375° F. In a small bowl, beat eggs. Fill separate dishes with bread crumbs and flour. Coat chicken cutlets in flour then dip into eggs, allowing excess to drip off. Then, generously coat both sides with bread crumbs. Heat oil in a large skillet over medium heat. When oil is hot, fry chicken and thoroughly brown on both sides. To remove excess oil from cooked chicken, place on a plate over paper towel. Pour ½ cup of pasta sauce into a 11x7" baking dish. Layer chicken in dish and evenly top with remaining pasta sauce. Once chicken is coated, sprinkle mozzarella cheese on top. Bake 20 minutes, or until cheese melts. Top with grated Parmesan. Serves 6.
Broccoli Romana
Ingredients:
3 tbsp Cento Classic Olive Oil
1 tsp Bellino® Minced Garlic
2 lb broccoli, broken into small florets
1 cup dry white wine (optional)
¾ tsp Cento Fine Sicilian Sea Salt
½ tsp Cento Ground Black Pepper
1 cup Parmesan cheese, grated
1 small red onion, sliced
2 tbsp Cento Seasoned Bread Crumbs
Instructions:
Heat oil in a large frying pan over medium heat. Cook garlic until soft, about 1 minute. Add broccoli, mixing well to coat broccoli with oil, and cook another minute. Add wine, if desired, salt and pepper. Cover and cook until broccoli is tender, stirring occasionally, about 8-10 minutes. Add cheese and mix well to combine. With a slotted spoon, transfer broccoli to a serving platter and set aside. In the same pan over high heat, bring juices to a boil and cook for 1 minute, scraping any excess off sides of pan. Add onion and cook for 1 minute, then pour evenly over broccoli. Sprinkle with bread crumbs and serve immediately. Serves 4.
