Candied Oregon Hazelnuts
Ingredients
• 1 1/3 cups whole bowl & basket™ hazelnuts
• 2/3 cup light corn syrup (not high-fructose corn syrup)
• 1/3 cup bowl & basket™ dark brown sugar
• 1 tsp good quality salt
Preparation
1. Preheat the oven to 300°F. Line sheet trays with parchment paper or silicone baking mats.
2. In a small bowl, combine the hazelnuts with the com syrup, brown sugar and salt. Spread the mixture onto the prepared sheet trays. It will look like a puddle of sugar studded with hazelnuts.
3. Bake for 25-30 minutes, stirring 2 or 3 times during baking, until the syrup surrounding the nuts is a lovely deep honey color.
4. Remove the pan from the oven and allow the candy to cool completely. Once cool, break or chop it into manageable pieces.
5. Store the candy in an air-tight container, at cool room temperature, for up to 1 month.
