Bacon-wrapped chili butter scallops
Ingredients
• 20 Bowl & Basket™ wild caught colossal scallops (3 bags)
• 10 slices applewood bacon, halved
• 1 tbsp olive oil
• 8 tbsp butter, divided
• 1 tsp chili powder
• 1 tsp crushed red peppers
• 1 tsp honey
Directions
1. Remove small muscles from sides of scallops. Wrap bacon around top and bottom of scallops, not sides. Secure with toothpicks.
2. In large skillet, heat oil and 1 tbsp butter over medium-high heat. Cook bacon-wrapped scallops in batches for 4 minutes or until bacon is browned, turning occasionally.
3. In small saucepan, melt remaining butter over medium heat. Add chili powder, crushed red peppers and honey.
4. Heat and stir until well combined. Drizzle over scallops.
Keep frozen until ready to use
