Pan Seared Pesto Mahi Mahi
Ingredients
• 1 bag (14-16oz) frozen cheese tortellini
• 8-12 oz Mahi Mahi portions thawed
• 3 tbsp olive oil
• 2 medium zucchini - cut into chunks
• 1 ½ cup diced Roma or cherry tomatoes
• ¼ cup plus 3 tbsp fresh or store-bought pesto
• salt and pepper to taste
Directions
1. Boil water and prepare tortellini according to package directions.
2. Pat Mahi Mahi portions dry with paper towel; sprinkle with ½ teaspoon each salt and pepper. Heat 2 tbsp oil in large skillet over Medium-High heat; add Mahi Mahi and cook 6-8 minutes or until internal temperature reaches 145°F, turning once during cooking. Transfer fish to plate; tent loosely with foil.
3. In same skillet, heat 1 tbsp oil and sauté zucchini 2-3 minutes. Add tomatoes and continue cooking, stirring often another 1-2 minutes or until heated through. Makes about 6 cups.
4. Serve Mahi Mahi over pasta mixture topped with remaining 3 tbsp pesto.
Variation
Season the Mahi Mahi with red pepper flakes when pan searing to add more spice to the dish.
