Almond - Banana Bread

Ingredients
• Nonstick cooking spray
• 2 1/2 cups bowl & basket™ almond flour
• 2 1/2 tsp baking soda
• 1 1/2 tsp baking powder
• 1/2 tsp pumpkin pie spice
• 1/8 tsp salt
• 2 bowl & basket™ large eggs
• 1 1/4 cups mashed ripe bananas
• 1/3 cup maple syrup
• 1 tbsp apple cider vinegar
• 3 tbsp coarsely chopped almonds
Directions
1. Preheat oven to 350°F. Spray a 9 x 5-inch loaf pan with nonstick cooking spray.
2. In a large bowl, mix almond flour, baking soda, baking powder, pumpkin pie spice and salt. In a medium bowl, whisk eggs, bananas, maple syrup and apple cider vinegar. Add banana mixture to flour mixture and stir just until combined. Makes about 2 1/2 cups.
3. Spread batter in prepared pan. Sprinkle with almonds and bake for 1 hour or until golden brown. If inserted toothpick in center of bread comes out clean, it's done. Cool in pan at least 1 hour. Remove from pan and cut into 8 (1 -inch-thick) slices.
