Risotto Alla Milanese - Risotto of Milan

Ingredients
• 1 lb of Arborio rice
• 1 oz of fresh butter
• 1 oz of extra virgin olive oil
• 1 glass of dry white wine
• 2 oz of grated parmesan cheese
• 1 small package of first rate saffron powder
• 1 1/2 liter of meat broth, or broth obtained with first rate stock cubes
• 1 tbsp of fresh onion, finely chopped salt and pepper to taste
Directions
Boil the broth. Melt the butter and the olive oil in a double-bottomed or anti-sticking saucepan. Add the onion and fry it very gently, until golden, on very low heat, preventing it from burning. Add the rice and toast it, stirring constantly, for about 2 minutes. Pour in the wine and turn the heat to a medium/high level; when the wine has evaporated, start adding half of the boiling broth. Continue to add the boiling broth a little at a time, stirring constantly, until the rice has absorbed it and is almost cooked (12-13 minutes). At this point, add the saffron powder to the risotto, followed by the parmesan cheese. Season with salt and pepper to taste. Take the saucepan off the heat flame and pour the risotto in a pre-heated serving dish. Let set for 2-3 minutes and serve.
