Dark Chocolate Bark with Pretzels & Candied Slivered Almonds & Currants
Ingredients
• 2/3 cup bowl & basket slivered almonds
• 1/3 cup bowl & basket™ granulated sugar
• 11/4 tbsp cocoa butter
• 1/3 cup currants
• 1/2 cup bowl & basket™ salted pretzels
• 1 cup 70% dark chocolate, broken into small pieces
Preparation
1. Make the candied almonds. Warm a pan on medium heat. Add half the sugar and monitor until it dissolves to clear and develops color. Shake the pan to evenly melt the sugar into a golden color. Stir in remaining sugar with a heat-proof spatula. Adjust the heat to get an amber gold color. Mix in the almonds and then the cocoa butter. Spread onto a heat-proof mat to cool (between 81-86°F). Break into pieces. Mix with pretzels and currants.
2. Temper the chocolate. Microwave for 1 minute in a plastic bowl; stir. Microwave again for 30 seconds; stir. Repeat until chocolate is nearly liquid with some solid chocolate - this will keep it tempered. Allow the solid chocolate to melt into the liquid chocolate at room temperature. Add tempered chocolate to candied almond mixture.
3. Pour and spread the mixture onto grease-proof paper until you can begin to see the pretzels through the chocolate. Wait 20-30 minutes. Break bark into shards.
