Bang Bang Catfish Bites
Ingredients
• 1 lb bowl & basket™ frozen catfish nuggets, thawed and cut into 1-inch pieces, if necessary
• ¾ cup buttermilk
• ¾ cup cornstarch
• ¾ cup canola oil
• ⅓ cup sweet Thai chili sauce
• 3 tbsp Mayonnaise
• 1 tbsp Fresh cilantro
Directions
1. In large bowl, stir catfish and buttermilk; let stand for 30 minutes at room temperature, then drain. Add cornstarch to medium bowl; working with a few pieces at a time, dredge catfish in cornstarch, shaking off excess.
2. In large skillet, heat oil over Medium-High heat for 3 minutes or until oil sizzles rapidly when sprinkled with cornstarch. In 3 batches, add catfish and cook for 4 minutes or until golden brown and internal temperature reaches 145°F, turning once; with slotted spoon, transfer catfish to paper towel-lined plate.
3. In medium bowl, stir sauce, mayonnaise, and 1/4 tsp each salt and pepper; add catfish and stir to coat. Makes about 3 cups.
4. Serve catfish sprinkled with cilantro.
