Mango Roasted Whiting
Ingredients
• bowl & basket™ whiting fillets (4 oz per serving)
• salt
• 14 cup olive oil
• 1/2 cups mango, diced small
• 1 cup tomatoes, diced small
• 2 garlic cloves, minced
• 2 tbsp basil, minced
Directions
1. Preheat oven to 425°F.
2. Brush some of the oil on the whiting fillets, season with salt and pepper, and place in an ovenproof dish or pan.
3. Mix the rest of the ingredients together; season with salt and pepper.
4. Pour the mango-tomato mix over whiting, and place in the oven. Roast until whiting is cooked through, 6-10 minutes.
Keep Frozen until Ready to Use
