Baked Crispy Cod with Lemon-Pepper Sauce

Ingredients
• bowl & basket™ olive oil cooking spray
• ½ cup Bowl & Basket™ plain Greek yogurt
• 1 tbsp chopped fresh parsley
• 1 tbsp fresh lemon juice
• 1 tsp lemon zest plus additional for garnish (optional)
• ¼ tsp bowl & basket™ Salt
• ½ tsp bowl & basket™ Pure ground black pepper plus additional for garnish (optional)
• ½ cup bowl & basket™ fish fry coating
• 4 bowl & basket™ Specialty wild caught Atlantic cod fillets, thawed if necessary (about 1 lb)
Directions
1. Preheat oven to 375°F; spray 13x9-inch baking dish with cooking spray. In medium bowl, stir yogurt, parsley, lemon juice, lemon zest, salt and pepper. Makes about ½ cup.
2. Spread fish fry coating in wide, shallow dish. Rinse cod under cold water allowing excess to drip off, then dip in fish fry coating to coat both sides; place in prepared dish and bake 20 minutes or until golden brown and internal temperature reaches 145°F, turning once. Makes 4 cod fillets.
3. Serve cod topped with sauce garnished with lemon zest and/or pepper, if desired. Serving size: 1 cod fillet
